Traditional pungent mustard oil processing with modern efficiency

Traditional Kachi Ghani Mustard Oil with Modern Efficiency

Mustard oil is a staple cooking oil in South Asia (India, Bangladesh, Pakistan, Nepal), prized for its characteristic pungent flavor derived from allyl isothiocyanate — a compound released when mustard seeds are crushed and exposed to water at elevated temperatures. Huatai's mustard oil production line is engineered to preserve this distinctive sensory profile while achieving modern production efficiency. The line uses controlled-temperature seed cooking (80-100°C) to activate myrosinase enzyme for isothiocyanate development, followed by high-pressure expeller pressing achieving 92-95% oil recovery. Capacities from 10 to 100 TPD, suitable for both small-scale traditional producers and industrial operations.

1

Seed Cleaning

Mustard seeds are cleaned through vibrating screens and aspirators to remove chaff, stones, dust and other foreign matter. Clean seeds ensure consistent oil quality and protect press components from abrasive wear.

3

Flaking

Conditioned seeds pass through flaking rolls to rupture the seed coat and expose the internal oil-bearing cells. Flake thickness of 0.3-0.4mm provides optimal surface area for subsequent cooking and pressing.

4

Controlled Cooking (80-100°C)

Flakes are cooked in a stack cooker at precisely controlled 80-100°C. This temperature range activates myrosinase enzyme which hydrolyzes glucosinolates into allyl isothiocyanate — the compound responsible for mustard oil's characteristic pungency. Overheating destroys the enzyme; underheating produces flat-flavored oil.

5

High-Pressure Expeller Pressing

Cooked flakes are fed into a high-pressure continuous screw press. Barrel pressure of 40-50 MPa achieves 92-95% oil recovery. The press cake (mustard oil cake) is a high-value organic fertilizer and animal feed ingredient.

2

Conditioning

Seeds are conditioned with steam to adjust moisture to 8-10%. Proper moisture is critical — too dry and the press overheats; too wet and oil recovery drops significantly.

6

Filtration & Sedimentation

Crude oil passes through settling tanks for coarse solids removal, followed by filter press for final clarification. The filtered oil retains its natural golden-brown color and pungent aroma — characteristic of traditional kachi ghani mustard oil.

Plant Capacity & Output

Indicative design windows. Final figures are fixed against your available feedstock and seed oil content.

Applications & Revenue Streams

How processors turn mustard oil into shelf products across food flavouring and industrial markets.

Kachi Ghani Bottled Oil

The pungent, unrefined oil that defines South Asian cooking. Buyers judge it on aroma and colour, both of which come straight out of the cooking and pressing stages rather than any later refining step.

Mustard Cake

Sold as an organic fertiliser and as a protein supplement in cattle feed. The residual oil content is low enough that the cake stores well without going rancid.

Mustard Essential Oil

Allyl isothiocyanate can be recovered as a separate high-value stream for food flavouring and pharmaceutical use. We include the recovery skid where the business case supports it.

Technical Highlights

Engineering innovations for superior mustard oil processing with traditional kachi-ghani character preserved.

Characteristic Pungency Preservation

Precise 80-100°C cooking temperature window activates myrosinase enzyme without denaturing it. This ensures consistent allyl isothiocyanate development — the hallmark of authentic mustard oil flavor prized in South Asian cuisine.

92-95% Oil Recovery

High-pressure expeller pressing with optimized barrel configuration achieves 92-95% oil recovery in a single pass — no solvent extraction needed for traditional kachi ghani grade mustard oil production.

Small to Industrial Scale

Line designs from 10 TPD (compact, suitable for rural cooperatives) to 100 TPD (fully automated, suitable for large-scale oil mills). Modular design allows capacity expansion in phases.

Frequently Asked Questions

Straight answers to the questions buyers ask us before placing an order.

What capacity of mustard line do you deliver?

From 5 TPD (kachi ghani cold-press) to 200 TPD (industrial expeller + refining). Most Indian clients are in the 10-50 TPD range.

Cold-pressed vs. refined mustard oil — what should I choose?

Cold-pressed (kachi ghani) preserves the natural pungency (allyl isothiocyanate) and sells at a 30-50% premium in India. Refined mustard oil is neutral and used in blending or industrial applications.

What's the oil content of mustard seed?

30-38% depending on variety. Indian brown mustard (Brassica juncea) is typically 32-36%; yellow mustard (Sinapis alba) is 28-32%.

Can I process rapeseed on the same line?

Yes. Mustard and rapeseed are closely related; the line can switch between them with minor cleaning/flaking adjustments.

How is the pungency preserved through the press?

Low-temperature cooking (≤60°C) and quick pressing keep the allyl isothiocyanate intact. The pungent compound is volatile and degrades at high temperatures.

What's the meal value after pressing?

Mustard meal contains glucosinolates that are toxic to non-ruminants in high concentrations. It is sold as organic fertilizer, soil amendment, or as a feed ingredient after detoxification treatment.

What capacity should I choose for a Mustard Oil Production Line?

Capacity depends on how much raw material you can secure year-round, not on how much you would like to sell. Tell us your daily or monthly feedstock availability, the local season pattern and your target market, and we size the line so it runs near full load most of the year instead of sitting idle between harvests.

Can the line be expanded later?

Yes. We build these plants in modules, so you can start with pressing and add solvent extraction, refining or fractionation once volume justifies it. We reserve the floor space, utility capacity and pipe racks for the later stages during the first installation, which costs very little at the time and saves a rebuild later.

Do you handle installation and training for a Mustard Oil Production Line?

We deliver on an EPC turnkey basis. Our engineers supervise foundation setting, erection and commissioning on site, run the line through performance testing, and train your operators and maintenance crew before handover. You receive a running plant, not a crate of parts.

What about spare parts and after-sales support?

Wear parts for the presses, filters and pumps are stocked as standard and ship with the plant as a recommended spares package. After commissioning our team stays reachable for remote troubleshooting, and we can place a service engineer on site for major overhauls.

How long does delivery take?

Lead time depends on capacity, configuration and how much custom engineering your site needs. Rather than quote a number that will not hold, we confirm a firm design, manufacturing and shipping schedule alongside the proposal, broken down by stage so you can plan civil works around it.

What do you need from me to prepare a quotation?

Three things are enough to start: your raw material and its typical oil content, your target capacity in tonnes per day, and the destination port or country. Send those over and we come back with a process flow, equipment list and budget estimate. Send your requirements on WhatsApp and we will take it from there.
